Earlier this year, Mantra Thai launched their ‘Journey to Thailand’ eight-course tasting menu. Crafted by the restaurant’s expert chefs, who collectively have over 30 years of experience, ‘Journey to Thailand’ is a celebration of traditional Thai ingredients and cooking techniques.

The Tom Kha Hua Hin Seafood Bisque is inspired by the rich ingredients of the seaside city of ‘Hua-hin’ in Thailand. Their unique Seafood Tom Kha soup is the perfect blend of spiciness, tanginess, and creaminess, enriched with the smoothness of coconut milk and infused with the aromatic notes of galangal, lemongrass, and kaffir lime.

Ingredients for Tom Kha Hua Hin Seafood Bisque

  • 2 oz galangal
  • 4 Kaffir lime leaves
  • 1 stalk lemongrass cut in half lengthwise
  • 200ml coconut milk
  • 1 cup shitake mushrooms sliced
  • 10-12 diced seafood
  • 2 tsp sugar
  • 1 tsp salt
  • 1-2 tsp lime juice according to taste
  • 1 cup fresh cilantro chopped
  • 1 cup red diced bell pepper


  • In a large pot add coconut milk, galangal, kaffir lime leaves, lemongrass, and simmer for around five minutes
  • Add in the shitake mushrooms and red bell peppers
  • Continue to cook, stirring occasionally, until the mushrooms are soft
  • Add the seafood and continue to stir occasionally until fully cooked
  • Remove from heat and carefully remove the lemongrass stalks and stir in lime juice, salt, and sugar to your taste before stirring in the cilantro
  • Serve as a soup or over jasmine rice for a heartier meal option
