If there’s one food that has the power to bring us comfort and joy it’s certainly a tasty grilled cheese sandwich. While it might sound like an easy task, there are quite a few unique twists you could try to spice up this gooey goodness.

So, pans at the ready and let’s celebrate this International Grilled Cheese Day with some of our favourite grilled cheese recipes…

The Ultimate Gourmet Grilled Cheese by The Chunky Chef

This elevated version of a grilled cheese sandwich has been crafted by talented chef Amanda. It’s loaded with herbed caramelised onions, white cheddar cheese and gooey gruyere. Simply put – it’s delicious, both sweet and savoury, and full of flavour!

Best of all, it’s very easy to make!

Ingredients:

  • 8 slices of good quality bread
  • Mayonnaise for spreading
  • 6 oz white Cheddar cheese (sliced thinly or grated)
  • 12 oz Gruyere cheese
  • 4 slices thin muenster cheese
  • 2 yellow onions
  • 1 tsp brown sugar
  • 1 tsp fresh thyme
  • 2 tsp fresh rosemary
  • 3 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper

Method

  • Add 1 1/2 tablespoons of butter and olive oil to a skillet, then heat over medium-low heat. Incorporate diced onions, salt, pepper, fresh thyme, and 1 teaspoon of fresh rosemary into the heated skillet. Sauté the mixture, stirring frequently, until the onions become soft and begin to brown, approximately 10 minutes
  • Mix brown sugar into the onions and continue cooking for another minute
  • Transfer onions to a plate
  • Spread a small amount of mayonnaise onto one side of two bread slices
  • In the same skillet, add the remaining butter and rosemary, then heat over medium heat. Swirl the skillet to ensure the melted butter coats the bottom evenly
  • Place both pieces of bread, with the mayonnaise side down, into the skillet. Cook until the bread becomes golden brown and crunchy, approximately 2-3 minutes
  • Immediately upon adding the bread to the skillet, place some cheese on top of each slice. Once the cheese begins to melt slightly, distribute a few tablespoons of caramelized onions over one of the slices of bread
  • Once the bread reaches a desirable golden brown colour, sandwich the pieces together and cook over low heat until the cheese is completely melted
  • Move the sandwich to a plate, and repeat the process with the remaining slices of bread and ingredients
  • Slice and enjoy!

The Traditional Grilled Cheese Sandwich by Recipetineats

This one is a rather traditional but oh-so-delicious recipe that will leave you craving more. Chef Nagi is walking you through her tasty and trusted, step-by-step guide to grilling the ultimate cheesy sandwich.

It’s all in the details!

Ingredients

  • 2 slices sourdough bread
  • 1/3 cup vintage cheddar cheese or Gruyere
  • 2 tbsp salted butter
  • 1/3 cup ozzarella

Method

  • Spread butter on the bread – generously coat both sides of each slice with butter (yes, including all four sides!)
  • Gently toast. Warm a sturdy skillet or frying pan over medium-low heat (no oil or butter needed). Place both slices of bread in the skillet and lightly toast for about 1 minute to heat them through and develop a subtle crust. (This initial toasting on one side will help melt the cheese evenly when we flip the sandwich.)
  • Layer on cheese. Turn over one slice of bread, then stack on the cheddar cheese followed by the mozzarella. Place the other slice of bread on top, ensuring that the hot toasted side makes contact with the cheese.
  • Cook for 3 minutes. Let it cook for 3 minutes or until the bread achieves an even golden crispness, gently pressing down with a spatula occasionally. If it’s browning too rapidly, take it off the heat briefly to cool down and reduce the temperature.
  • Flip and cook for 3 minutes. Turn the sandwich over and cook the other side for another 3 minutes, or until the bread turns golden and the cheese fully melts.
  • Move it to a cutting board. Slice in half swiftly. Marvel at the cheese stretch. Enjoy every bite!

Grilled Cheese with Sun-Dried Tomato Pesto by Once Upon A Chef

Out of all grilled cheese recipes, this one is bound to remind you of a hot, crispy pizza panini, and what could be better than that? Put together by chef and cookbook author Jenn Segal, this grilled cheese sandwich is hard to say no to!

With the perfect flavour combination of tomato pesto and cheese, it will leave you wanting more!

Ingredients (for Sun-Dried Tomato Pesto)

  • 1 jar sun-dried tomatoes packed in olive oil
  • 2 cloves of garlic
  • 1/2 tsp sugar
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 1 cup packed fresh basil leaves
  • 1/3 cup freshly grated Parmigiano-Reggiano
  • 1/4 cup + 2 tbsp pine nuts
  • 2 tbsp water

For the Grilled Cheese Sandwiches

  • 8 slices Italian bread
  • 8 oz fontina or gruyere cheese
  • 4 tbsp soft butter
  • 1/2 cup sun-dried tomato pesto

Method for the Sun-Dried Tomato Pesto

  • In the bowl of a food processor equipped with a steel blade, blend the sun-dried tomatoes along with their oil, garlic, salt, red pepper flakes, sugar, basil, pine nuts, Parmigiano-Reggiano, and 2 tablespoons of water
  • Pulse the mixture, pausing to scrape down the sides as needed, until it achieves a finely puréed consistency

Method for the Grilled Cheese Sandwich

  • Spread butter on one side of each bread slice. Flip over and evenly spread pesto on the other side of each slice
  • Heat a large nonstick or cast iron pan over medium heat
  • Place 4 slices of bread, butter-side-down, in the pan
  • Evenly distribute the cheese over the bread slices, then cover with the remaining bread slices to form sandwiches
  • Cook until the first side is golden brown, for a few minutes
  • Carefully flip the sandwiches and continue cooking until the cheese is fully melted and the bread turns golden brown, for a few more minutes
  • Allow the sandwiches to cool slightly, then cut them in half and serve
