Here’s how to make it…
Chris Baber’s Chicken Kebabs
For the kebab
1 pack HECK! Simply Chicken Mince
2 x cloves garlic grated
2cm ginger grated
1 small green chilli finely chopped
1/2 tsp cumin
1/2 tsp ground coriander
1 tsp garam masala
1 tbsp coriander finely chopped
For the chutney
Small bunch of mint leaves
Small bunch coriander
1/2 tsp cumin
Pinch of salt
2 tbsp lemon juice
Splash of water
2 tbsp Greek yoghurt
For the salad
2 ripe tomatoes with seeds removed and diced
1/4 cucumber with seeds removed and diced
1/2 red onion finely sliced
4 shop-bought chapatis or roti to serve
Chris Baber’s Chicken Kebabs: Method
Place all the kebab ingredients into a mixing bowl. Using clean hands work into a tight mixture.
Divide into four even-sized pieces.
Using your hands, form the chicken mix around the skewer to form the kebabs.
Cook on a grill or a BBQ (weather permitting) for a few minutes on each side until lightly charred and cooked all the way through.
For the chutney, place all the ingredients other than the yoghurt into a blender and whizz until smooth and add a splash more water if needed.
Transfer to a bowl then stir in the yoghurt, and adjust the seasoning to taste. Warm the chapatis lightly on a pan.
Load the warmed chapati with salad and the kebab (removed from the skewer) then drizzle with chutney.
Serve, tuck in and enjoy!
