Nestled in the heart of the idyllic Northumberland countryside, the magnificent Matfen Hall has long stood as a bastion of luxury and refinement. Its regal architecture, lush gardens, and commitment to creating an exceptional guest experience have drawn discerning individuals from around the world…
Matfen Hall, with the appointment of Ernst Van Zyl as its new Head Chef, brings a vision to further develop what is already an exceptional dining experience, with a focus on a more international flavour to its offer.
Prior to Van Zyl’s move to Matfen Hall, he was the Head Chef at The Isle of Eriska Hotel, a prestigious 5-star establishment in Benderloch, Oban, where he had an impressive 3 AA Rosettes.
Ernst Van Zyl brings an unparalleled wealth of expertise to Matfen Hall. Accumulated over a remarkable 25-year culinary career that has taken him to the world’s most celebrated dining destinations. His innovative approach has solidified his position as a leading figure within the world of modern cuisine.
“I am thrilled to be joining the Matfen Hall family and taking on the role of Head Chef,” Van Zyl said.
“I have always been passionate about pushing culinary boundaries and delivering the best dining experiences possible. Matfen Hall provides the perfect platform for me to showcase my skills and creativity.”
Ernst Van Zyl’s Commitment to Excellence
It’s not just about a remarkable CV, though. Van Zyl’s commitment to his craft and his relentless pursuit of excellence is nothing short of extraordinary. He was a semi-finalist in the prestigious National Chef of the Year competition in both 2011 and 2012. Additionally, he has won a string of accolades demonstrating his commitment to delivering nothing but the best.
What distinguishes Van Zyl is his extensive international experience. Having honed his skills (as a stagiaire) at some of the world’s most renowned restaurants, such as Maaemo in Oslo, Norway, and Restaurant Frantzen/Lindeberg in Stockholm, Sweden.
He has also graced the kitchens of Le Manoir Au Quat Saisons in Oxford, Noma in Copenhagen, Denmark, and the iconic Heston Blumenthal’s Fat Duck restaurant.
Such diverse international exposure has transformed him into a truly multicultural chef with a breadth of flavours and techniques that few can rival.
Van Zyl ensures his dishes always embrace a flavour of the region. Provenance is key to this. The innovative chef loves to source as much produce as close to the property as possible. This includes foraging and bringing produce, plants and herbs into the kitchen and onto the plate. This all lends to a sustainable approach to cooking.
Van Zyl brings the love of local flavour to each of the restaurants that form part of the overall diverse dining offer at Matfen Hall. Matfen Hall offers a vast array of dining options that cater to every palate and preference. It’s a promise of diversity and versatility. Underpinned by the same commitment to delivering the highest quality in every culinary creation.
