Matfen Hall, with the appointment of Ernst Van Zyl as its new Head Chef, brings a vision to further develop what is already an exceptional dining experience, with a focus on a more international flavour to its offer.

Prior to Van Zyl’s move to Matfen Hall, he was the Head Chef at The Isle of Eriska Hotel, a prestigious 5-star establishment in Benderloch, Oban, where he had an impressive 3 AA Rosettes.

Ernst Van Zyl brings an unparalleled wealth of expertise to Matfen Hall. Accumulated over a remarkable 25-year culinary career that has taken him to the world’s most celebrated dining destinations. His innovative approach has solidified his position as a leading figure within the world of modern cuisine.

What distinguishes Van Zyl is his extensive international experience. Having honed his skills (as a stagiaire) at some of the world’s most renowned restaurants, such as Maaemo in Oslo, Norway, and Restaurant Frantzen/Lindeberg in Stockholm, Sweden.

He has also graced the kitchens of Le Manoir Au Quat Saisons in Oxford, Noma in Copenhagen, Denmark, and the iconic Heston Blumenthal’s Fat Duck restaurant.

Such diverse international exposure has transformed him into a truly multicultural chef with a breadth of flavours and techniques that few can rival.

Van Zyl ensures his dishes always embrace a flavour of the region. Provenance is key to this. The innovative chef loves to source as much produce as close to the property as possible. This includes foraging and bringing produce, plants and herbs into the kitchen and onto the plate. This all lends to a sustainable approach to cooking.

The Cloisters Restaurant offers relaxed all-day dining with an excellent view of
the Great Hall’s magnificent stained-glass window, and remains the perfect spot for guests to unwind and savour the culinary delights that Matfen Hall has to offer.

For those seeking something a bit different, Matfen Hall offers The Orangery. A dedicated tea lounge that serves a distinctive afternoon tea experience. Here, the atmosphere is light, bright, and inviting.

The options include Classic Afternoon Tea, Champagne Afternoon Tea (a glass of Laurent Perrier Harmony) and Laurent Perrier Afternoon Tea (a tasting flight of Laurent Perrier Harmony, Cuvee, and Rose).

In addition they include an Afternoon of Indulgence – tea for four, where the hotel’s chauffeur will collect you from your home (and drop you back).
