Marc discovered his love for cooking at a very young age and loved to experiment with food.

Marc concentrates on simple but tasty dishes, utilising the abundance of seasonal ingredients growing in the gardens at Wynyard Hall. He has a passion for local produce and has spent most of his career working in and around North Yorkshire.

In 2018 Marc ventured overseas to Dubai to further his career and started at the renowned seafood restaurant, Pierchic.

In 2022 he returned to the North and joined the team at Wynyard Hall where he is executive chef not only for the elegant weddings and events in the main hall but for the Glass House restaurant, which is located in the kitchen gardens, as well.

A foodie at heart, and a talented chef, Marc Lomas is now sharing his life in food.

A meal that takes you back to childhood…

My mum’s shepherd’s pie holds a special place in my heart. My favourite part was always the mashed potato – full of cream and butter! The joy of assisting her in the kitchen while preparing this dish will always be a fond memory of mine.

The food that brings you the greatest joy…

It has to be fresh seafood! Each year I really look forward to the Skrei Cod season (only available from January to April). It has the same delicate flavour as cod but boasts giant, meaty flakes, making it a stunning piece of fish to work with. You’ll definitely find this on the Wynyard Hall menus early in the year.

The food that represents where you come from…

As I was born and grew up in West Yorkshire and within the rhubarb triangle; it has to be Forced Yorkshire rhubarb. I look forward to the season every year! It’s such a versatile ingredient that works on savoury dishes, not just sweet.

Your most memorable meal…

This is a tough one, I would say either Pollen Street Social in London or Roka in Dubai, both are very different but equally amazing! More locally, you can always guarantee a great meal at The Bay Horse at Hurworth & Riley’s fish shack in Tynemouth.

Your favourite meal of the day and why…

Dinner is always my favourite meal of the day! I love giving my son his dinner and then cooking dinner for myself and my wife once he’s gone to bed.

My son, who is nearly six months old, is really enjoying the weaning process. It’s great to see his reactions to all his first tastes, the only thing he hasn’t liked so far is parsnip!

The best cook you know…

When it comes to culinary prowess, my Mum and mother-in-law reign supreme. Their expertise in the kitchen is unmatched, and their flavoursome creations never cease to amaze.

The food you turn to when you need some comfort…

My ultimate comfort food is Cadbury’s Fruit and Nut. My cupboard is always well-stocked and I have a secret stash that sometimes makes its way to work with me… I could eat it by the bucket load!

The food you always need in your fridge…

Bacon is a non-negotiable staple that is a must in my fridge. When I get a leisurely morning, free from work’s demands, there’s nothing quite like a sizzling bacon sandwich. Can’t beat it!

The food you could never give up…

I would have to say – Ribeye steak with peppercorn sauce. It’s such a staple masterpiece of a meal, I just could never imagine giving it up. It’s too good!

What food means to you…

For me, food is all about bringing people together and sharing moments with family and friends. Gathering around a table, sharing meals with loved ones, laughing, and sharing stories about our days —it’s in those moments that the true magic of food reveals itself.
