RECIPE: Loukoumades

5g dried yeast


100g plain flour


1/2tsp sugar


Pinch of sea salt


200g potatoes


90g honey


Juice of half a small lemon


A sprinkle of cinnamon

Mix the dried yeast, a handful of the flour, the sugar and 175g of warm (hand hot)water in a bowl and cover.


Leave for 1/2 hour in a warm place whilst you peel, boil and mash the potatoes.


Add the rest of the flour plus the potatoes (cool them slightly) and whisk until you have a thick, smooth batter. Either leave this for 1 1/2 -2 hours to froth up, or even better cover and leave overnight in the fridge.


Make a honey and lemon syrup: boil the honey and lemon juice with 20ml water until thickened then pour into a jug.


Once the batter is very puffy, either use a deep fat fryer set at 190 degrees C, or a shallow pan of hot oil and fry teaspoons of the batter for 1 minute until golden and crisp- turning half way through.


Drain well on kitchen paper then transfer to a bowl. To enjoy – dip your loukamades in syrup then dust with ground cinnamon.
