How To Bake Perfect Christmas Eve Cookies

There is nothing better than freshly baked cookies on Christmas eve. Picture this, a warm glass of milk, carrots for the reindeers and a delicious selection of hot from the oven cookies set out by the fireplace ready for Santa coming (don’t forget to try one or two for yourself.).


125g butter, softened
125g golden caster sugar
1 egg, beaten
1 tsp vanilla extract
250g plain flour, plus extra for dusting
100g filling of choice (optional)

This recipe makes 20 biscuits.


Heat the oven to 190C/170C fan/gas 5

Place your butter and sugar in a large mixing bowl and gradually begin to cream them together until pale and fluffy

Once the ingredients represent a smooth consistency beat in the egg and vanilla extract until smooth

Add the flour a little bit at a time and begin to stir into your mixture until it reaches a soft dough

Choice of filling

Now it is time to add in your festive filling. Sweeten up your Christmas eve by packing your cookies with a choice of: 

  • Chocolate chips
  • Red and green M&Ms 
  • Red and green sprinkles 
  • Marshmallows
  • Mince pie
  • Raisins
  • Oats
  • Hazelnuts/ pecan nuts
  • Dried raspberries
  • Cheese and thyme

Gradually add your choice of filling to your dough and stir it in until combined 

Once your dough has formed, sprinkle some flour on a clean dry surface and begin to knead gently. TOP TOP: Be careful not to over-knead your dough as you will lose the air inside as well as the thickness

Next, place your dough on a plate and cover with cling film. Place in the fridge to chill for at least 2 hours

Once your dough is ready, on a lightly floured surface, roll out to a thickness of around 0.5cm – 1cm

Using a variety of cookie cutters of your choice, stamp out your shapes to form your festive treats. Re-roll the trimmings and repeat

Transfer the festive shaped dough onto a lined baking tray and bake for 8-14 mins until the edges turn lightly golden in colour and leave to cool

Once cooled, feel free to get creative and decorate your cookies. From chocolate drizzles and red, green and white icing to sprinkles aplenty.
