A sunny September weekend calls for cocktails and we’ve got eight sip-worthy El Rayo Tequila cocktail recipes for you try.

EL RAYO T&T

INGREDIENTS:

40ml El Rayo Reposado

Double Dutch Indian tonic

Wedge of grapefruit

Ice

METHOD:

Fill a highball glass with lots of ice. Garnish with a wedge of bittersweet grapefruit. Sit back and enjoy the new way to drink tequila. 

EL RAYO MARGARITA

INGREDIENTS:

40ml El Rayo Reposado

25ml fresh lime

10ml Agave Syrup

Dash orange bitters

Black Salt Rim

Ice

Thyme Sprig garnish

METHOD:

Mix all ingredients in a cocktail shaker and strain over ice into a tumbler glass.

EL RAYO OLD FASHIONED

INGREDIENTS:

50ml El Rayo Reposado

10ml Agave Syrup

2 x dash Angostura

Ice

Orange peel garnish

METHOD:

Fill a tumbler glass with ice and pour in the mixed ingredients. Garnish with orange peel.

EL RAYO RHUBARB MARGARITA

INGREDIENTS:

40ml El Rayo Blanco

30ml Rhubarb Juice (see method)

20ml Lime Juice

10ml Agave Syrup

Black Salt Rim

Ice

Dried Lime wheel garnish

METHOD:

Cook rhubarb sous vide at 60C for two hours. Strain pulp through chinois. Add equal parts water to the liquid. Pour into a tumbler glass and garnish with a dried lime wheel. 

EL RAYO GREEN PEPPER

 INGREDIENTS:

40ml El Rayo Blanco

10ml Suze

25ml Garden Cordial (see method)

20ml Lime Juice

15ml Jasmine Tea Syrup

Ice

Top Fever Tree Ginger Ale

Green pepper slice garnish

METHOD:

Juice 1 x celery, 1 x green pepper, handful of sugar snap peas and a bunch of parsley. Shake and strain over ice. Add equal parts agave water ratio 1:2 and garnish with a green pepper slice.

EL RAYO VERDITA

 INGREDIENTS:

40ml El Rayo Blanco

50ml Verdita mix (see method)

15ml Lime Juice

10ml Velvet Falernum

Ice

Jalapeno top garnish

METHOD:

Blend 1 x litre Eager pineapple juice, ½ bunch coriander, ½ bunch mint, 1 x whole fresh jalapeno (save the end for garnish). Strain off pulp and pour over ice into a tumbler glass.

EL RAYO RED COCKTAIL

INGREDIENTS:

40ml El Rayo Blanco

15ml Campari

10ml Mezcal

30ml Pink Grapefruit Juice

25ml Red Pepper syrup (see method)

Shake and strain over ice into highball glass

Top Fever Tree Soda

Garnish Pink grapefruit wedge, oregano sprig

METHOD:

Juice 1 x red pepper. Add equal parts sugar syrup 1:1. Shake and strain over ice into a highball glass and garnish with a juicy pink grapefruit wedge and oregano sprig.

EL RAYO NEGRONI

 INGREDIENTS:

40ml El Rayo Reposado

25ml Campari

25ml Antica Formula

10ml Yellow Chartreuse

Ice

METHOD:

Mix together all ingredients, then stir and strain over ice into a Nick & Nora glass. Express lemon zest over drink and discard.
