Our friends at Rockliffe Hall have been catching up with Great British Bake Off star Briony Williams ahead of the Christmas period and her afternoon tea event at the resort's Festival of Food in February.

Are you ready for Christmas?

I am not ready for Christmas in anyway. I have not bought a single Christmas present. I’m trying not to panic about it! It will all be fine.

Where will you be spending Christmas?

For Christmas we always spend it at our house and we alternate between my husband’s family and my family coming over. This year it’s my husband’s family but then in the evening my mum and my family will be coming over to watch Christmas Bake Off because I’m on it this year.

Do you have any Christmas cake baking tips? 

My best Christmas cake baking tip is to make it well in advance. I mean you can make it now that’s fine but you can make it well in advance and then feed it every week with lots of lovely sherry or tea if you’re not a big drinker!, or you could do rum as well. Mix it up a little bit, use whatever your favourite festive tipple is! Yes, I would say make it in advance and feed it lots.

What’s your favourite thing about Rockliffe Hall? 

There are so many amazing things about Rockliffe Hall! The general beauty of the place, it is amazing for kids as well. There’s Mischmasch which is fantastic, there is so many things for my daughter to do. It is dog friendly for our little pooch Archie, which is wonderful. The food, the staff, there are just so many things. It is just a great place.

Are you looking forward to Rockliffe Hall’s Festival of Food?

I cannot wait to come for the Festival of Food, it is going to be a fantastic week. I am really looking forward to the afternoon tea, that is going to be great fun as well. I want some really nice juicy questions for the Q&A. I’ll tell you all the juicy gossip about Bake Off, all the behind the scenes stuff. I am looking forward to seeing what the other chefs are up to. Things like the Artisan food market is going to be great.

What are you looking forward to next year?

Next year, of course I am really looking forward to the Festival of Food at Rockliffe Hall in February. I’m also now a presenter on Channel 4’s Food Unwrapped so I’m really looking forward to doing some more filming for that. Just generally being mummy still to my little girl. I’m really excited to see what 2020 has to offer.
