Mark Percival won North East Chef of the Year back in 2011 and has headed up the kitchen of the Close Hotel and Golf, Argent D’or, Vermont Hotel, Langley Castle, and Eslington Villa. After training in Classic French cuisine, he has gained a reputation for a more modern style of cooking and has made it no secret that his favourite dishes are fish dishes.

A meal that takes you back to childhood…

My Grandma’s meat and potato pie. It was always my favourite meal as a child.

The food that brings you the greatest joy…

Scottish Seafood. Working in a seafood restaurant, I have travelled around quite a bit to source the best fish and I believe Scottish Seafood is the best in the world.

The food that represents where you come from…

Born in the North East, it has to be a ham and peas pudding stottie.

Your most memorable meal…

Vila Joya, in Portugal. It’s a 2 Michelin star restaurant and I took my wife there for our first anniversary.

Your favourite meal of the day and why…

Breakfast. It sets me up for the day. I usually have poached eggs on toast and it keeps me going all day.

The best cook you know…

I don’t know him but a chef who inspires me is Tom Kitchen in Edinburgh.

The food you turn to when you need some comfort…

Cheese. Usually French cheese is my favourite and the stronger the better.

The food you always need in your fridge…

Butter. It compliments and enhances whatever you are cooking and gives a dish extra flavour.

The food you never give up…

Cheese. It’s my go to food. I love trying various types of cheese from different countries.

What food means to you…

Comfort. Food is something we can all enjoy whether it be cooking or eating it. I love foods that provide a sense of nostalgia like hearty home cooked meals.
