MY LIFE IN FOOD: RICHARD ALLEN

Rockliffe Hall's executive chef talks food memories...
MY LIFE IN FOOD: RICHARD ALLEN

A meal that takes you back to childhood…

Freshly-baked bread, straight from the oven. It takes me back to my childhood, standing next to my father in our bakery in Dorset.

The food that brings you the greatest joy…

I love a good curry. The whole romance of the spices and aromas coming together as it slowly bubbles away is mesmerising for me.

The food that represents where you come from…

Seafood is a big thing for me. Growing up on the south coast, I used to love crabbing in Poole Quay, luring for mackerel at Chesil Beach and wreck fishing for large cod.

Your most memorable meal…

Anything cooked by my mum.

Your favourite meal of the day and why…

For me, breakfast is very hard to beat. A good old full English is a great start to any day.

The best cook you know…

Gareth Ward, Chef Patron at Ynyshir in Mid Wales.

The food you turn to when you need some comfort…

Cheese and beans on toast every time.

The food you always need in your fridge…

Good quality salted butter. It’s something I really need in my life.

The food you could never give up…

Dark chocolate. I always sneak a handful of the stuff from the pastry cupboard at work.

What food means to you…

For me, eating is something that is universal, regardless of background. Everyone understands the language of food.
