Move over Monday... it's National Prosecco Day and we're celebrating with some of our favourite fizzy cocktail recipes.

RASPBERRY LIMONCELLO PROSECCO

NATIONAL PROSECCO DAY: FIZZY COCKTAIL RECIPES

INGREDIENTS:

FOR THE LIMONCELLO PROSECCO
 3 cups rose prosecco
1 cup limoncello liquor
1/4 cup raspberry simple syrup
Fresh mint leaves, thin lemon slices, fresh raspberries to garnish

FOR THE RASPBERRY SIMPLE SYRUP
1/2 cup white sugar
1/2 cup water
1 cup fresh raspberries
1 tablespoon lemon zest (about 1 small lemon)
1/4 teaspoon lemon juice (about 1/2 a small lemon)

METHOD:

Make the Raspberry Simple Syrup: Combine the sugar, water, lemon zest and lemon juice in a small pot. Bring to a boil and add fresh raspberries. Reduce heat and simmer for 5 minutes, stirring frequently. Remove from heat and let steep for about 5 minutes. Strain the syrup to remove all the solids and pour into a bowl. Chill until completely cooled. Makes about 3/4 cup syrup. Store in an airtight container for up to two weeks.

Combine the rose prosecco, Limoncello and raspberry simple syrup in a large pitcher.

Pour a little white sugar onto a plate and spread to cover. Moisten the rim of your glasses with a lemon wedge and gently dip the rims onto the sugar plate.

Pour raspberry Limoncello prosecco mixture into sugared glasses. Garnish with fresh mint, lemon slices and fresh raspberries. Enjoy chilled!

ELDERFLOWER PROSECCO COCKTAIL

INGREDIENTS:

1/2 lemon, juiced
1/2 lime, juiced
30ml of gin
Prosecco
Elderflower cordial
Ice

METHOD:

Fill a glass or a wine glass with ice. Add the lemon and lime juice, the gin, then a good splash of elderflower cordial.
Fill the rest of the glass with prosecco then have a taste (you want about 2/3 prosecco to 2/3 everything else).
You might need to add more elderflower. TIP: Keep frozen berries in the freezer to make a stellar garnish – especially strawberries

RASPBERRY LIMONCELLO PROSECCO

INGREDIENTS:

3 cups prosecco, chilled
1 cup limoncello liqueur, chilled
1 cup frozen raspberries
6 sprigs fresh mint

METHOD:

In a large pitcher, whisk together prosecco and limoncello.

Serve over raspberries, garnished with mint, if desired.

BLOOM BELLINI

INGREDIENTS:

25ml Bloom Premium London Dry Gin
10ml peach juice such as Funkin Puree White Peach Bellini Cocktail Mixer or Granini Peach Juice
SanLeo Prosecco Brut NV Italy, sparkling wine prosecco, to top up

METHOD:

Shake together the gin and peach juice with ice in cocktail shaker, pour into open glasses.

Top with the prosecco and serve.
